One of my new favorite breakfasts is so amazingly simple its conception. Oh, and it’s delicious. I got this idea from Kristi at Life Sprinkles after she posted a pic of her chocolate oats on Instagram a few weeks ago. I decided I wanted chocolate for breakfast, too! Kristi was nice enough to divulge her recipe, which I used as my guide in my own chocolatey creation.
Because I wanted to amp up the protein of my oats, I added a big ol’ spoonful of peanut butter. Oh man was that the best idea ever. My oatmeal came out tasting like a peanut butter cup! Unlike a Reese’s, however, it is totally sugar free. Oh, and gluten free. And high in fiber. And protein.
Chocolate Peanut Butter Oatmeal
Serves 1
1/2 cup old fashioned oats
1 teaspoon chia seeds (optional)
1/2 cup water
1/2 cup unsweetened almond milk (or coconut milk, I’ve used both)
1 1/2 teaspoons cocoa powder
1/4 teaspoon vanilla extract
1/2 teaspoon honey
1 Tablespoon peanut butter
In a bowl, mix oats, chia seeds, water, milk and cocoa powder. Microwave for roughly 2 minutes, or until the oats have absorbed all of the liquid. Stir in vanilla extract, honey and peanut butter. Eat!
